Crispy Southwest Chicken Wraps

 Mmm MMM MMMMM! These are SO GOOD. And pretty easy to put together. Another fabulous recipe find on Pinterest!



1 cup cooked rice, warm or at room temperature
1 cup cooked, shredded chicken
1 can black beans, rinsed and drained
1/2 red or green pepper, diced
1/4 cup fresh cilantro, chopped
juice of 1 lime
1/2 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic salt
2 cups shredded cheese
Sour cream (optional)
6 burrito-sized flour tortillas
DIRECTIONS:
Mix rice together with chili powder, cumin and garlic salt. Add remaining ingredients except for cheese and sour cream. Sprinkle cheese over tortillas, leaving 1/2-inch border around edges, then arrange chicken and rice mixture down the center of each tortilla. If you desire, add dollops of sour cream before adding your filling.  Roll stuffed tortillas, leaving edges open. Spray the tortillas all over with cooking spray.

Heat a large non-stick skillet (or griddle) over medium heat for 1 minute. Grill wraps seam side down and cook until golden brown and crisp, about 2-3 minutes per side. Slice in half at a diagonal. YUMMERS!

Quick and Easy Chili

This recipe is SO fast, I actually made it TOO early tonight. Seriously, it's quick. And scrumptious. And easy.

Just try it. :)

1 lb lean ground beef (or turkey)
1 cup chopped onions (I use 1/2 onion)
1 clove garlic, minced
1-14.5 oz can chopped tomatoes or 2 cups fresh tomatoes
2-3 cups red kidney beans (I use 2 cans, drained and rinsed)
1-8 oz can tomato sauce
1 TBSP chili powder
Sprinkle of brown sugar (I'm a bit more generous with this)
Dash or two of Worcestershire sauce

Brown beef on stovetop in pot. Add onions and garlic and continue to cook until tender. Add rest of ingredients and simmer until thick. Serves 4-5

See? EASY.

Veggie Lasagna

This is a very yummy and healthy(ish) lasagna! Love all the veggies in it! My husband LOVES this dish and it's totally meatless.

Sauce layer:
1 jar of spaghetti sauce
1 can black beans (optional), drained and rinsed
Baby spinach leaves
Green bell pepper, chopped
1 cup mushrooms
1 zucchini, chopped


Cheese layer:
2 cups shredded Mozzarella
2 cups low fat cottage cheese
1/2 cup Parmesan cheese
1 oz cream cheese


Spread sauce layer on bottom of 9x13 pan. Layer uncooked lasagna noodles on top. Layer half the cheese mixture on top of noodles. Spread another 1-2 cups of sauce layer on top of cheese. Layer more uncooked lasagna noodles. Layer remaining cheese. Then layer remaining sauce. Sprinkle mozzarella cheese on top. Cover in foil and bake at 350 degrees for 50 minutes. Remove foil and bake for 10 more minutes.

Let lasagna sit for 20 minutes before cutting so it has time to set. Serves 4-5




Monterey Chicken

1 package chicken gravy mix
1/2 C cottage cheese
3 oz. cream cheese
1/2 C sour cream
1 tsp salt
1 C grated Monterey Jack cheese
1-4oz can chopped green chilis
3 cups chicken, cooked

Prepare gravy mix as directed. Stir in remaining ingredients. Allow to heat thoroughly. Serve over rice.

Revolutionary Mac & Cheese

YUMMY! Easy and yummy!

Ingredients:
2 cups dried pasta
2 cups 2% milk
1 cup loosely packed shredded cheddar cheese
1 tsp salt
1 tsp dijon mustard


Directions:
In a small saucepan, add pasta and milk.  Bring to simmer, then reduce heat to low and cook for 15 minutes, until pasta is soft, stirring frequently and ensuring milk does not boil.
Turn heat off, add cheese, salt & mustard and stir to combine.  Cover and let stand for about 5 minutes, then stir again and serve.


If you would like to bake it at this point, place in a baking dish and top with a generous sprinkling of cheese. Bake at 375 degrees for approximately 10 minutes until cheese has melted.
Makes enough for 2 people.

Over the Top Apple Crisp

 Quick recipe for a delicious apple crisp, perfect for fall!

11 Cups sliced apples, peeled if desired (appx. 7 large apples; Grannysmith works well)
1/2 Cup sugar
1 tsp Cinnamon

Mix sugar and cinnamon in a bowl. Pour over apples and toss to coat. Place coated apples in greased 9x13 dish. Preheat oven to 350 degrees.

Crisp:

1 Cup flour
1 1/2 Cups brown sugar
2 Cups quick cooking oats
1 1/2 tsp baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg

Stir above ingredients in medium bowl.

3/4 Cup cold butter, cut into chunks.

Cut butter into flour/oat mixture and spread on top of apples. Bake for 50-60 minutes until apples are cooked.

Banana Chocolate Chip Pancakes

  • 2 cups baking mix (or homemade bisquick mix)
  • 1 cup mashed bananas
  • 1 egg
  • 1 cup milk
  • 3/4 cup chocolate chips
  1. Place baking mix in a large bowl. Set aside.
  2. In another bowl mix together bananas, egg and milk.
  3. Stir banana mixture into baking mix until evenly moist.
  4. Stir in chocolate chips.
  5. Preheat non-stick griddle or skillet over medium heat and lightly grease. Drop batter using a 1/4 cup measure and cook on one side until bubbles form on top.
  6. Flip and continue to cook until golden brown on both sides.
Makes: 12 small pancakes
