Pumpkin Spice Pancakes

Pumpkin Spice Pancakes

Ingredients:
1¼ cups all-purpose flour
2 tbsp. brown sugar
2 tsp. baking powder
¼ tsp. salt
¾ tsp. ground cinnamon
¼ tsp. ground nutmeg
Dash of ground ginger
Dash of ground cloves
1 cup milk
½ cup pumpkin puree
1 large egg
2 tbsp. vegetable oil or melted butter
Directions:
In a medium mixing bowl, combine the flour, brown sugar, baking powder, salt and spices and stir with a fork to combine.  Mix together the milk, pumpkin puree, egg and oil or butter in a liquid measuring cup.  Add the wet ingredients to the dry ingredients and whisk together just until combine.  (The batter may still have a few lumps – that is okay.)
Preheat the oven to 200° F.  Have an oven safe plate or serving dish ready.  Heat a greased skillet or griddle over medium heat.  Once the skillet is hot, add a 1/3 cup scoop of batter to the pan.  Let cool until bubbles begin to form on the top surface.  Carefully flip with a spatula and cook the second side until golden brown, a couple minutes more.  Transfer the cooked pancake to the oven safe dish, and place in the oven to keep warm.  Repeat with the rest of the batter until it has all been cooked, regreasing the pan as needed.  Serve with cinnamon sugar, maple syrup, and/or whipped cream.

Fettucine with Fresh Herbs

 This is a quick pasta to make when you' can't think of what to make for dinner! I'm sure any kind of pasta would work and I only used chopped parsley and it still tasted good!

8 ounces fettucini
2 cloves garlic, chopped
2 Tbsp olive oil
1/2 C fresh chopped parsley
1/2 C fresh chopped basil
4 tomatoes, cored and chopped
salt and pepper
Parmesan Cheese

Cook pasta according to package directions. Drain. Saute garlic in olive oil until tender. Add pasta, herbs, and tomato. Heat through. Season with salt, pepper and cheese. Serves 4-5. DELICIOUS and really easy!

Squirrel Bars!

These are insanely delicious!


1/2 C peanut butter
1/3 C butter
3/4 C brown sugar
3/4 C sugar
2 eggs
2 tsp vanilla
1 C flour
1 teaspoon baking powder
6 ounces chocolate chips

Mix together first four ingredients. Add eggs and vanilla. Stir in flour and baking powder. Spread mixture into greased 9x13" pan. Sprinkle chips on top. Bake 3 minutes at 350 degrees. Take out and swirl chocolate chips into batter (marbelize). Return to oven for another 18-20 minutes. Cool completely. Cut into bars to serve! YUMMMM!

Dessert Nachos

 Make the dessert chips and drizzle with melted chocolate. Top with strawberries and whipped cream.




Dessert Chips:

Preheat oven to 350.
Lightly brush one side of a tortilla with melted butter or butter spray. Then sprinkle on some cinnamon sugar to your liking. Cut the tortillas into wedges and place on an ungreased cookie sheet. Bake in the oven for about 10-12 minutes. ENJOY!

Best Chocolate Chip Cookies

Chocolate Chip Cookies

3/4 cup butter
1 cup brown sugar
1/2 cup sugar
1 egg
1 1/2 ts vanilla
1 tsp baking soda
1/2 tsp kosher salt
1 cup mini chocolate chips (semi sweet or milk chocolate)
2 cups flour

Preheat the oven to 350 degrees

In a bowl with a paddle attachment, beat the butter and sugars for about 3 minutes.

Add the egg and vanillas.

Mix in remaining ingredients.

Use a small ice cream scoop and scoop them onto an ungreased cookie sheet. Don't flatten, they will flatten perfectly while baking.

Cook for 10-11 minutes, no longer! They might seem like they need to brown more, but don't let them!

Bowtie Lasagna



1 Pound Ground beef
5 Cups bow-tie noodles
3 Cups spaghetti Sauce
1 Tablespoon Olive Oil
1 Teaspoon Garlic Powder
1 Teaspoon Italian Seasoning
1/2 Cup Mozzarella Cheese
1/2 Cups Sour Cream

Fry ground chuck in small pan. Meanwhile, cook noodles according to package directions.
After noodles are cooked, drain and drizzle with olive oil. Mix in your spaghetti sauce. Add seasonings, cheese, and sour cream. Fold together and allow it all to combine and melt together, over low heat, for about 5 minutes, or until cheese is melted. Very yummy and makes enough to serve 4-6 people!
